WHAT IS HONEYCOMB?
Honeycomb is a natural product made by honey bees. It consists of a series of hexagonal cells constructed from beeswax which contain raw honey. This is the purest form of honey, since it has been sealed inside each hexagonal cell by the hive's bees and will keep indefinitely if stored correctly.
Honeycomb is delicious to eat, wax and all, and has been part of the human diet for thousands of years. After enjoying the burst of honey sweetness, the wax can be chewed like gum and discarded, or swallowed.
GREEN TEA HONEYCOMB
Bryn Hill's Green Tea Honeycomb is harvested from our tea plantation in Topaz, Tropical North Queensland, Australia. Tea blossoms, full of healthy nectar and pollen, are produced by our tea plants throughout late Autumn, just before the plants go into hibernation for the winter. The resultant honeycomb is rare as most tea plantations do not have bushes that grow tall enough to produce tea flowers and flowering is also discouraged by removal of any flower buds to ensure strong tea leaf growth.
SINGLE ORIGIN
Our Green Tea Honeycomb is made by bees collecting pollen and nectar from only one species of flower, our Camellia sinensis tea plants, which is why our single origin comb has its own gourmet taste. The contained honey has a light colour with a delightfully mild, slightly floral taste.
CHEMICAL FREE
Bryn Hill beehives are interspersed among our 30 acres of tea, an environment that is chemical and pesticide free and bordered by World Heritage rainforest . Our hives are organically managed according to Australian regulations, however our honeycomb is not certified organic by any regulatory body.

HEALTHY
Our Green Tea Honeycomb contains the raw, Green Tea Honey still capped in the cell, protected from oxidation and full of beneficial components. However, the honeycomb cells also contain lots of goodness-they are not just tasteless 'wax'. There are trace amounts of essential minerals like calcium, iron, magnesium and zinc as well as vitamins A, C, B6, B12, E, and D. Honeycomb's antioxidant, antifungal, and antibacterial properties are well researched, and possibly due to traces of pollen, propolis, and royal jelly as well as long-chain fatty acids, fibre and beneficial alcohols found in the wax. |
HONEYCOMB VERSUS HONEY
Would you take lots of different coloured paints and mix them together in order to make one dingy brown colour? Would you take all your favourite lipsticks and mash them together? Would you take your favourite jam and mix it with various jams and marmalades?
Probably not, yet that is usually what most beekeepers do: they take all the individual nectars the bees worked so hard to contain in little protective hexagonal cells and mix them together so the whole batch tastes the same. The bees do so much hard work and it gets heated and blended into something resembling supermarket honey.
Single origin, raw honey is definitely an improvement on this mundane product but honeycomb is the best of all-a valuable, unique blend of flavours, colours and aromas occurring within a single comb of honey.
